Wacker Specialties has launched Cavamax® W6 alpha cyclodextrin, which is enzymatically produced from starch, as a new soluble dietary fiber well suited for use in clear beverages. Cavamax W6 is non-diges­tible, yet fully fermentable. Its solutions are haze free, colorless and odorless with low viscosity and neutral taste. It is heat stable, even under strongly acidic conditions, and it does not contribute to browning reactions even in complex food systems. Its applications include beverages, dairy products, baked goods and breakfast cereals.
